Carrot Cake

I accidentally bought too much carrots and I really had to do something with that!
So I made a chicken soup with some of the carrots and a delicious carrot cake, Mary Cadogan recipe, from this site only I used a lemon instead of orange and cacao powder instead of a nutmeg.
It was the second time I made this Yummy Scrummy Carrot Cake, as it was a big success!
I also like about this recipe that you just slightly mix everything with a wooden spoon and voila to the oven.
Serve with tea or coffee.
