This week has been a bit hectic, but I still managed to eat some how healthy meals.
For me it is very important to eat 3 meals a day, but rarely happens, so at least eating a quick snack at morning and something heavier for dinner:)
So here are some of the dishes I've ate during the week and a Quinoa Salad Recipe.
First some nutritional facts:
Quinoa is a grain originated in the Andean region of Ecuador, Bolivia, Colombia and Peru. Quinoa grains contain essential amino acids, calcium, phosphorus and iron. It contains more protein than any other grain and it also provides starch, sugars, oil, fiber, minerals and vitamins.
Quinoa is light and easy to digest.
Recipe:
1/2 cup Quinoa
1 diced tomato
1 grated carrot
Sweeten dry cranberries
Chopped parsley
Atlantic salt (reach in minerals)
Juice from a fresh lemon
Cook the Quinoa as noted on the pack (about 15 min to cook). add the vegetables, mix in the cranberries and parsley. You could also add chopped red onion and a diced cucumber.
Add lemon, salt and you could also add some sunflower oil. I prefer without.
