Stuffed Peppers - Vegetarian

This time I am trying to enjoy vegetarian meals more often, so I try to think on full meals that will fill me and nourish me.
This red bell peppers are stuffed with red and green frozen lentils, onion, garlic, mushrooms, quinoa, bulgur (a cereal made from the groats of several different wheat species, most often from durum wheat. The word bulgur is of Turkish origin).
All I did is saute all the ingredients in a pan with a little olive oil and than stuffed the peppers and cooked them in a tomato sauce for about 20-30 minutes on a low heat.


Oh I wanted to take a nice picture before eating it and almost forgot, so here is a picture of a half eaten pepper:)
